- 1 Spanish onion (large, or 2 small, peeled and diced)
- 5 garlic cloves (peeled and thinly sliced)
- 1 kg vine tomatoes (chopped)

- 3/4 tsp. black pepper
- 3/4 tsp. cumin
- 1 tsp. salt
- coconut yoghurt (vegan to serve)

Sooo yummy! I had to replace the vermicelli with cous-cous, and I added a pinch of saffron to the rice. Otherwise I kept to the recipe and it turned out great. I will cook this again.
