- 1/2 cup brown basmati rice (uncooked, rinsed)
- 1 cup black beans (cooked, I used canned, rinsed and drained)
- 1 tsp. ground cumin
- 1/2 garlic clove (minced)
- 1/2 tsp. olive oil
- 1 tsp. tomato paste
- pinches salt
- 1 red bell pepper (or yellow, seeded and chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (small, chopped, mine came to about ¾ cup chopped)
- 1 Tbsp. fresh lime juice
- 2 Tbsp. cilantro leaves (chopped fresh)
- 1 1/2 tsp. olive oil
- salt
- pepper (to taste)
- 1 avocado (ripe, medium)
- 1/2 clove garlic (minced)
