- 1 yellow onion (diced)
- 6 garlic cloves (crushed)
- 2 bell peppers (1 red and 1 green, diced)
- 2 tsp. achiote powder
- 1 Tbsp. ground cumin
- 1 tsp. cayenne powder (adjust to taste)
- 2 tsp. paprika
- 1 Tbsp. oregano
- 14.5 oz. diced tomatoes (or fresh tomatoes, peeled and diced)
- 10 oz. peas (cooked)
- 2 cooked carrots (diced, 1 cup or about 10oz)
- 1 cup chicken broth (adjust based on desired consistency of rice)
- 4 Tbsp. soy sauce
- 2 Tbsp. chopped cilantro (finely, can also use parsley)
