- 1 yellow onion (medium, finely chopped)

- 4 oz. baby bella mushrooms (about 6 mushrooms, stems removed and finely chopped)
- 1 lb. ground chicken
- 5 oz. baby spinach (1 clamshell)
- 28 oz. crushed tomatoes (I recommend San Marzano.)
- 8 basil leaves (finely chopped, plus extra for serving)
- 1 tsp. kosher salt
- 1 1/2 tsp. crushed red pepper
- 1 tsp. dried oregano
- 1/4 tsp. granulated sugar
- 1/2 cup ricotta cheese
- 6 oz. mozzarella cheese (grated, about 1½ cups)
- 1/4 cup grated Parmesan
- 1/4 cup panko breadcrumbs (whole-wheat)
