- 2 yellow onions (large, cut into thin slices)
- 1 pinch salt

- 1/2 cup balsamic vinegar (good quality)
- 1 molasses (tsbp, you can also use honey)
- 140 grams lamb (backstrap also known as lamb fillet or lamb loin)
- 1 tsp. smoked paprika (ground)
- 1/8 tsp. ground coriander
- 1/8 tsp. ground cumin
- 1/4 tsp. fine sea salt
- olive oil spray
- 1 roll (Turkish pide, cut in half lengthwise, or your favorite top quality roll)
- 1 cup rocket (arugula, packed)
- 2 figs (large, stem removed, thinly sliced, each slice then cut in half)
