Description
Aromatic and flavorful, this lamb dish can be prepared in one pot to minimize clean up. The onions, garlic, and meat are browned together before the addition of wine, vinegar, tomatoes and herbs. This mixture is then cooked partially covered for 90 minutes, allowing you plenty of time to get other things done in the meantime. This lamb stew is great for a cool winter weekend. Serve alongside your favorite flatbread or rice with greek yogurt.

- 1 leg of lamb (boned and cut into pieces)
- 2 onions (cut into rings)
- 2 cloves garlic (chopped)
- 250 mL red wine (full-bodied)
- 2 Tbsp. vinegar (balsamic fig, alternatively Modena)
- 400 grams diced tomato (canned)
- 200 grams dried figs (whole)
- 1 Tbsp. ground cinnamon
- 1 tsp. sugar
- bay leaf
- ground black pepper
- olive oil
- salt
- greek yogurt
- paprika

Directions
- Heat a drizzle of oil in a heavy pan and fry the onion until soft.
- Add the garlic and meat. Cook until brown.
- Add the wine, vinegar, and tomatoes, and bring to a boil.
