Ingredients

- 1 Tbsp. olive oil
- 1 onion (finely sliced)
- 1 kg lamb (cubed)
- 300 grams carrots (chopped)
- 8 dates
- 100 grams dried apricots
- 1 Tbsp. clear honey
- 2 Tbsp. parsley
- 1 Tbsp. tomato puree
- 1/2 tsp. cayenne pepper
- 1 tsp. ginger (I prefer fresh grated ginger)
- 1 tsp. turmeric (freshly grated, I prefer fresh grated root turmeric - so superior to powdered! I buy 500g, grate it all in one go then freeze in tsp sizes)
- 2 cinnamon sticks
- 2 tsp. paprika

Directions
- Heat oil and cook onion. Add lamb, carrots and spices and cover with water. Bring to just under boil. You may wish to add a Knorr Lamb Cube.
- Add tomato puree, over and simmer for 1 hour 20 minutes.
- Add apricots and honey and any seasoning. Simmer uncovered for 20 minutes until thick and soupy.
- Add dates and simmer for a further 5 minutes. Scatter with parsley leaves and serve with couscous or quinoa
