- 2 lb. leg of lamb (boneless or lam shoulder trimmed of excess fat, cut into 1 1/2" pieces)
- 1/2 Tbsp. sea salt (for the lamb plus 1 tsp for stew)
- 1 tsp. black pepper
- 1/2 tsp. stew
- 1/4 cup all purpose flour (or gluten free flour*)
- 1 yellow onion (large, diced)
- 4 garlic cloves (minced)
- 1 1/2 cups red wine (good)
- 1 lb. button mushrooms (thickly sliced)
- 4 cups low sodium beef broth (or stock)
- 1 Tbsp. tomato paste
- 2 bay leaves
- 1/2 tsp. dried thyme
- 1 1/2 lb. small yellow potatoes (halved or quartered into 1" pieces)
- 4 medium carrots (10 oz, peeled and cut into 1/2" thick pieces)
- 1/4 cup parsley (finely chopped for garnish, optional)

Aromatic, rich, delicious. Used Baby Bellas instead of button mushrooms. The bacon made my husband very happy.

This was excellent! I would have used more potatoes if I had them. It was flavorful, the kids loved it. It made a lot of gravy for sopping up good French bread. I actually had to pull some broth out so that it wouldn’t spill over even though I used an 8 qt Dutch Oven. It fed my family of 6 easily with legit overs for 1 or 2 more . I used a dark red California blend wine and added a slash more than the recipe called for . My bacon was not very fatty and so I need to use more than the recipe called for to brown the lamb in Small batches .

This turned out amazingly and was very easy to make. My son loved it too. My only complaint is that there was not as much soup/broth for the amount of stew ingredients... not sure why.

amazing flavor. wouldn't change a thing. ok i did substitute portabella mushrooms instead of plain button mushrooms

Fantastic flavor and tenderness. Simmered covered on stovetop in regular pot instead of oven. Used lamb shoulder and heart and Oregon Pinot Noir. Relatively easy for such an elegant and comforting meal!

This stew is absolutely fantastic! I definitely added more lamb because...lamb. I also took the advice of another user and tossed the whole bottle of a nice soft red blend into the pot. The stew was incredible! I also added more mushrooms because we like them in my family. This is a great recipe to put your own touches on depending on your preferences.

Pretty simple to make. The worst part is how good your house smells while the pot is in the oven.
