- 1 Tbsp. minced ginger (fresh)
- 1 tsp. aleppo pepper
- olive oil (as needed)
- 2 onions (peeled and thickly sliced)
- 4 potatoes (cubed)
- 5 carrots (sliced into thick coins)
- 1 cup diced tomatoes (or 1 C tomato sauce)
- 2 cups beef stock (+ more as needed)
- 2 cinnamon sticks
- salt (freshly ground, as needed)
- freshly ground pepper (as needed)
- pickles (for serving, I used pickled cranberries and preserved lemons)
