- 1/4 cup Parmesan
- 2 Tbsp. lemon juice

- freshly ground pepper
- 1 cup spelt
- 6 cups water
- 1/4 cup olive oil
- 2 Tbsp. butter
- 4 finely chopped shallots
- 3/4 cup dry red wine
- 2 cups chicken stock
- 1/2 cup Parmesan
- 1 medium red onion (finely chopped)
- 6 sprigs mint (finely chopped)
- 1 lb. ground lamb
- 1 egg (or 2 if you want your meatballs a bit moister)
- 3 Tbsp. whole wheat breadcrumbs
- 1 pinch ground cinnamon
- 1 pinch ground coriander
- olive oil
- salt
- freshly ground pepper
