Description
With just six simple ingredients you can make a tasty spread to use on sandwiches or pair with a cheese and cracker plate with this recipe for La Mancha-style Grilled Pepper and Tomato Spread. Made with pureed roasted tomatoes and bell peppers, this spread is seasoned with salt, olive oil, cumin and minced garlic according to personal preference. If you want to add some heat to this pepper and tomato spread you can add some chili powder or cayenne pepper.

- 5 red bell peppers
- 4 tomatoes (medium)
- 2 cloves garlic (minced)
- salt
- cumin
- olive oil

Directions
- Grill the peppers and tomatoes until brown all over in spots and the skin loosens. Place the peppers in a covered pan and set aside. Once cooled, peel the peppers and dice. Set aside.
- Press the tomatoes in a strainer to remove as much liquid as possible. Place into a blender and puree.
- Place the peppers into a dish and add the tomato. Add salt to taste and the garlic with a pinch of cumin and olive oil to taste.
