- 3 large carrots
- 2 baby carrots
- 8 oz. mushrooms (sliced)
- 3 cloves garlic (minced)
- 1 Tbsp. tomato paste
- 2 tsp. dried parsley
- 2 tsp. dried oregano
- 1 zucchini (medium or 2 small, sliced into half moons)
- marinara sauce (32. oz of your favorite, jarred or homemade, you can use the ingredients for mine here, just add the ingredients right to the pot)
- 2 cups broth (Veggie)
- 1 1/2 cups water
- 1/2 lasagne noodles (a box of broken)
- 2 handfuls baby spinach (fresh)
- salt
- pepper
- ricotta (Vegan, recipe, Optional)
