- 1/2 red capsicum (medium sized)
- 1/4 cup peanut oil
- 7 spring onions (trimmed and cut into 5 cm lengths)
- 4 ginger (slices)
- 3 garlic cloves (crushed)
- 3 red chillies (large, cut in half lengthways and seeds removed)
- 1 red onion (small, cut in half and then into wedges)
- 2 Tbsp. black beans (salted)
- 1/4 cup shao hsing wine (or dry sherry)
- 1/3 cup water
- 2 Tbsp. light soy sauce
- 2 tsp. white sugar
- 1 tsp. sesame oil
- 2 chillies (red bird's eye, sliced)
- 2 tsp. malt vinegar
- 10 grams samphire (picked native, stems)
- 10 grams parsley leaves (picked native sea)
- 1/4 cup thai basil leaves (picked sweet)
- 1/4 cup mint leaves (picked)
