- 1 cup peanuts (shelled, with or without the skin)

- 12 oz. chicken breast (cut into ¾” cubes)
- 1 tsp. oil
- 1 tsp. cornstarch
- 1 tsp. Shaoxing wine
- 1/8 tsp. salt
- 1 pinch ground white pepper
- 1 Tbsp. light soy sauce
- 1/2 tsp. dark soy sauce
- 1 Tbsp. rice wine vinegar
- 1 tsp. sugar
- 3 Tbsp. water
- 1 tsp. cornstarch
- 3 Tbsp. oil
- 3 cloves garlic (smashed and sliced)
- 2 slices ginger (minced)
- 2 dried red chilies (deseeded and chopped, these can be quite spicy, so adjust according to your own tastes)
- 1/2 tsp. Sichuan peppercorn (powder)
- 6 scallions (white portions only, cut into ¾” pieces)
