  • 1 tablespoon dark soy sauce
  • 1 tablespoon dry sherry (Chinese wine/Shaoxing is more authentic)
  • 1 tablespoon chinese black vinegar (or balsamic vinegar)
  • 1 tablespoon hoisin sauce
  • 2 tablespoons water (optional)
  • 2 teaspoons maple syrup (or brown sugar)
  • 1/2 tablespoon cornstarch (corn flour)
  • 1 broccoli (large, about 400 grams)
  • sichuan peppercorns (tbsp dried)
  • 1 tablespoon cooking oil (high temperature, I use cold-pressed Scottish rapeseed oil)
  • 3 garlic cloves (grated or minced)
  • 1 tablespoon grated ginger
  • 5 spring onions
  • 1 carrot (cut into matchsticks or thinly sliced)
  • 3 red chillies (dried, optional, to flavour the oil)
  • 100 grams unsalted cashews (roasted, I roast for 10 minutes at 180C)
