- 1 lb. meat (beef short rib, flank steak or beef tenderloin, sliced into 1/4" thick strips)
- 1 green bell pepper (cut into 1/2" x 1" pieces)
- 2 Tbsp. cooking oil (for stir-frying; peanut oil recommended)
- 3 cloves garlic (thinly sliced)
- 1 inch ginger root (peeled and thinly sliced)
- 10 hot chilies (dried red finger-length)
- 3 Tbsp. roasted peanuts
- 1/2 tsp. Szechuan peppercorns (finely ground, I like grinding in a mortar with a pestle)
- 3 green onions (cut into small rounds)
- 1 Tbsp. Shaoxing rice wine
- 1 Tbsp. cornstarch
- 2 Tbsp. low sodium soy sauce
- 1 tsp. dark soy sauce
- 2 tsp. chinese black vinegar
- 1 tsp. Shaoxing rice wine (or sherry wine)
- 1/2 tsp. white sugar
- 1/8 tsp. white pepper
- 2 Tbsp. water
- 1/2 tsp. cornstarch
- 2 Tbsp. Szechuan peppercorns
- 2 Tbsp. red chili flakes (dried)
- 1/2 cup oil (any oil will work, though my favorite is peanut oil)
