Nice , simple, tasty. I had made a similar recipe from Yummly called, easy cucumber kimchi, that had better depth of Flavour. In saying that, the ease of this recipe and the good results will mean I will make this again.

Amazing pickles!! At first, the measure of gochujjang seems excesive, but it’s just right, as the cucumber slices release much water when immersed in the mix. Next time I plan on adding Chinese green onion to make it hotter 🙂
