- 4 lb. pork loin (lean, trimmed of fat and cut in chunks)

- 1 tsp. minced garlic
- 1 Tbsp. fresh ginger (minced)
- 1 cup beef stock (or chicken)
- 1/4 cup rice wine vinegar
- 1 Tbsp. mirin
- 1 Tbsp. tamari sauce

It was fabulous.
I didn't do the pork the way it was described but slow roasted it with pineapple juice, liquid smoke after coating with a good southwest rub and searing all sides.
But added the BBQ sauce to the pulled pork and made the slaw as described. Very thinly sliced the cabbage, almost shaved. The julienned peppers didn't do much for it so won't add again, although cucumber appeals, might try that.
Made mandarin pancakes for the wraps, this was outstanding! Restaurant quality.
