  • 1 tablespoon toasted sesame oil (for sauce)
  • 2 tablespoons water (for sauce)
  • 1 pound ground turkey (preferably thigh meat)
  • 1/2 tablespoon vegetable oil (for turkey)
  • 1/2 teaspoon salt (for turkey)
  • 1 tablespoon vegetable oil (for zucchini)
  • 1 tablespoon salted butter (or vegetable oil)
  • 1/4 teaspoon salt (for mushrooms)
  • 1 tablespoon black sesame seeds (or white sesame seeds)
  • 1/4 cup microgreens (or alfalfa sprouts)

    Directions

    1. Cook rice with water according to package instructions; meanwhile, continue with recipe. (Pro Tip: You can make brown rice instead of white if you like, but be sure to allow extra cooking time.)
    2. Trim ends off zucchini. Halve them lengthwise, then slice crosswise into pieces about 1/2-inch thick. Rinse and drain mushrooms and quarter them.
    3. Mince garlic. Whisk garlic, gochujang, applesauce, sesame oil, and water together in a small bowl until evenly blended. Add a few drops extra water if needed for a flowing texture. (Pro Tip: If gochujang is labeled extra-hot, use a little less.)
