  • 7 ounces glass noodles (dry Korean, 당면 Dangmyeon – doesn’t have to be exact)
  • 8 dried shitake mushrooms (3/4 cup fresh shitake mushrooms, sliced)
  • 1 cup carrots (julienned)
  • 1 onion (small, thinly sliced)
  • 6 green onions (– cut 4 green onions into 2 inch, 5 cm lengths and chop 2 green onions)
  • 1 cup wood ear mushrooms (fresh, Mogi Beoseot 목이버섯 or 10g dried wood ear mushrooms)
  • 2 tablespoons vegetable oil
  • 2 teaspoons dark soy sauce (jin ganjang 진간장 See my Know your Soy Sauce post for more info)
  • 1 teaspoon rice wine
  • 1 teaspoon garlic (chopped)
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1 dash black pepper
  • 3 tablespoons dark soy sauce (jin ganjang 진간장)
  • 1 tablespoon sugar
  • 1 tablespoon rice wine (or mirin)
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 tablespoons water (Shitake mushroom, from hydrating mushrooms, substitute plain water if using fresh mushrooms)
