- 1 sweet potato (medium, 500 g / 1.1 pounds, I used 'Beauregard' variety, which is the most common sweet potato type in Australia. You can use other kinds that are suitable for deep-frying or roasting.)
- cooking oil (Some, for deep-frying, enough to cover the sweet potatoes in a pot)
- pine nuts (Some crushed, or roasted sesame seeds, to garnish, optional)
- 3 Tbsp. raw sugar
- 1 Tbsp. cooking oil (I used rice bran oil)
