- 2 pears (use a semi-hard sweet variety like conference or barlette OR 1 Asian pear, peeled and grated)
- 3 cloves garlic (grated)
- 3 1/2 Tbsp. dark brown sugar
- 4 Tbsp. soy sauce (tablespoons)
- 2 1/2 Tbsp. roasted sesame oil
- 2 tsp. ginger (grated)
- 8 black pepper (grinds of, adjust to taste)
- 1 pinch sea salt
- 1 spring onion (or scallion, finely chopped)
- 1 clove garlic (grated)
- 4 1/2 Tbsp. pasta (Korean fermented soy bean, dwengjang)
- 3 Tbsp. roasted sesame seeds
- 2 Tbsp. chilli paste (Korean, gochujang)
- 2 Tbsp. mirin
- 1 1/2 tsp. roasted sesame oil
- 1 bowl white rice (cooked medium-grain)
- 1 handful lettuce leaves (green leaf)
- 1 handful leaves (sesame, optional)
