- 1 cup bbq sauce (or more of Korean)
- 3 cups reduced sodium soy sauce
- 3 cups light brown sugar (packed)
- 1 cup water (60 ml, divided)
- 1 cup Soju (or sake)
- 1/2 cup gochujang
- 1/2 cup honey (mild)
- 1/3 cup rice wine vinegar
- 1/4 cup minced garlic
- 1/4 cup fresh ginger root (grated)
- 4 scallions (roots trimmed off, thinly sliced)
- 1 pear (ripe, peeled, cored and grated on the finest side of a box grater)
- 1 tsp. black pepper
- 1 tsp. chili pepper (Korean, powder or crushed red pepper flakes)
- 3 Tbsp. starch (Clear Jel, ThermFlo or other canning)
