- 1 Tbsp. soy bean paste (Korean, doenjang)
- 1 1/4 cups soy sauce
- 1/2 cup dark brown sugar (packed)
- 3 Tbsp. maple syrup
- 3 Tbsp. rice vinegar
- 2 Tbsp. korean chile paste (gochujang)
- 2 Tbsp. ginger (grated)
- 2 Tbsp. toasted sesame oil
- 2 Tbsp. toasted sesame seeds
- 6 black pepper (grinds, or to taste)
- 1 pinch sea salt (or kosher salt)
- 6 cloves garlic (grated)
- 4 spring onions (large, or scallions, chopped finely)
- 8 boneless chicken thighs (skin on)
- 2 sweet potatoes
- vegetable oil (to brush lightly on the grill)
- 2 ears corn (cut in half crosswise)
- 15 chile (threads, for garnish, optional)
- 1 pinch black sesame seeds (for garnish, optional)
