    Thanks for posting this simple version of the original. In south central Texas, in Kingsville, located 3 miles from King Ranch (a ranch bigger than Rhode Island). This 1950’s original recipe uses cans of mushroom soup and cream of chicken, one each (I omit the latter and prefer to add sodium-free broth to rinse the remnants of soup per the Campbell’s label’s instruction). The main thing missing from this recipe is the 4 to 8 ounces of sliced black olives (amount depends on preference). A FULL table spoon of ground cumins, and garlic is also used to give it more flavor. Something to consider if you like spicier cuisine, is to substitute hot hatch peppers over the green chilies, add 1/4 cup of chopped jalapeños, and a tablespoon of Mexican oregano flakes. You may choose to add a handful of black beans and corn too. It’s a great recipe to throw together for a large group since it’s easy to double the size!

    Subbed pico de Gallo for rotel and tortilla chips for tortillas because that’s what I had.......delicious! I too can’t stomach canned soups.

    My husband loved it, had three servings. But, I wish I would had drain the Rotel can cuz it came out too juicy. Once ready to eat, we added some Mexican style cilantro lime sour cream on top. Delicious, Delicious 😋

    I used cream of chicken soup as indicated in the comments and it turned out wonderfully

    So Yummy! Gone in 29 minutes! I added a can of cream of chicken soup to the sauce and used a poached 4-5 pound whole chicken .The dark meat mixed with the white meat gives a richer taste!

    I baked and shredded the chicken. I also used fresh roasted green Chiles fantastic! New fav!

    Great recipe!!! I make this casserole, but the older version, with cream of mushroom soup, have no problem with cream soups. But often when it comes to chicken casseroles I do make my own. Back to this recipe , it's yummy, will make it again, thanx for sharing
