- 1 Tbsp. vegetable oil
- 1 lb. boneless skinless chicken breasts (cut into 1/2-inch chunks)
- 1 1/2 cups water
- 14.5 oz. petite diced tomatoes (undrained)
- 1 pkg. chicken flavor rice (ZATARAIN'S®)
- 2 tsp. chili powder
- 1/2 cup sour cream
- 1 cup shredded Mexican blend cheese

Directions
- Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
- Stir water, tomatoes, Rice Mix and chili powder into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
- Stir in chicken and sour cream; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Sprinkle with cheese. Let stand 5 minutes.
