- 1 3/4 cups homemade chicken stock (or store-bought)
- 10 oz. diced tomatoes with green chiles (drained)

- 2 lb. chicken meat (smoked, coarsely chopped, about 5 cups shredded or chopped chicken; you can substitute roasted or grilled chicken)
- 1 cup fresh cilantro leaves (loosely packed, chopped, plus more for garnish)
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded sharp cheddar cheese
- 18 corn tortillas (6-inch, 15-cm)
- 1/4 cup vegetable oil (mild, for frying the tortillas)
