It's yummy but also, dry. The flavors are great together. Maybe it's all the potato, but it feels like it needs to be tossed in a dressing or something to me. And no, my potatoes weren't overcooked, they were just as they ought to be 😂

I added green pepper for interest. Hubby had three helpings. It's super easy and the leftovers will make a tasty frittata.

Awesome for either breakfast or dinner with an egg on top. Easy and quick as well for weeknight meals!

I’m a fan of kielbasa anyway, but this was a nice side for a hearty breakfast

Good recipe. My family is doing the whole 30 diet and this worked perfectly for breakfast! Paired with some fruit and eggs it was fantastic.

Easy & Delicious! Plus a great way to use additional veggies up. Added portabella mushrooms to mine.

Red pepper flakes would punch this up a bit. Or lemon and feta to make a Greek flavor.

I loved the combination of peppers and potatoes! My potatoes didn't cook well, so next time I will boil or bake them first. Definitely a truly delicious meal!

I absolutely loved this recipe. The sausage made it salty but not overpowering. The recipe calls for only half of an orange pepper but I used a whole one. This is a perfect quick meal. I think it would also taste great cooked on the BBQ.
