- 1 Tbsp. cooking oil (I prefer genuine extra virgin olive oil like THIS)
- 16 oz. sausage (kielbasa, thinly sliced)
- 1 onion (peeled and diced)
- 2 carrots (peeled and diced)
- 2 celery stalks (diced)
- 1 Tbsp. tomato paste (organic)
- 5 cups low sodium beef broth (or chicken broth, homemade has the deepest flavor)
- 1 yukon gold potato (large, scrubbed clean & diced)
- 1 sweet potato (peeled and diced)
- 2 cups chickpeas (cooked, homemade or canned)
- 1 can fire roasted diced tomatoes (drained)
- 1/2 greens (a bunch of chopped organic, wood stems removed, kale, swiss chard, spinach, mustard greens, etc.)
- sea salt (to taste, like THIS)
- cracked black pepper (to taste)
- granulated garlic (to taste, I use it liberally)
- onion powder (to taste)
- crushed red pepper (to taste)
