  • 1 tablespoon oil
  • 1 red onion (thiny sliced)
  • 2 cups red cabbage (finely shredded)
  • 1 apple (peeled, cored and grated)
  • 1 pinch ground cloves
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • 14 ounces kielbasa (cut into bun-size lengths and halved lengthwise)
  • 4 submarine rolls (split)
  • 2 cups baby spinach leaves
  • coarse grain mustard (to serve)

    Directions

    1. Heat oil in a large skillet on medium heat. Sauté onion 4-5 mins, until tender. Add cabbage and cook 2-3 mins, until wilted. Stir in apple and cloves; cook a further 5 mins.
    2. Add vinegar and sugar. Season to taste; cook a further 3-4 mins.
    3. Meanwhile, heat a grill pan or skillet on high heat. Spray sausages with no stick cooking spray. Cook 2-3 mins, turning, until browned and heated through.
    4. Fill rolls with cabbage mixture, spinach and sausage. Serve with mustard.
