Very easy to toss together and tasty! I made it with a tomato jam and chicken tenders and it was a great meal. Will definitely make again! Play around with spices other than just salt and pepper to get different flavors.

I loved this recipe! I’d suggest keeping the fritters small in the pan to get them more crispy. I also subbed Flax meal for Almond meal because it was in my pantry and turned out yum yum yum! I made two for tonight with a frozen veggie patty for a low carb dinner and will enjoy two more times this week. Thanks for the great recipe!

Nice recipe to try zucchini in a different way. I really liked the way the fritter crisped up. I was also happy that the leftovers kept well and held up in the microwave for reheating.

Pretty good! I think I'll add onion and carrot to jazz it up. The whole family loved them!
