Even if you don't follow a keto diet, these hearty, grain-free veggie burgers are packed with so much flavor, you'll want to keep them on your shortlist for healthy meals. The recipe is a Yummly original created by Sara Mellas.

- 1/2 small onion
- 2 cups cremini mushrooms (or white mushrooms, 2 cups is 8 oz.)
- 2 cups cauliflower florets (2 cups is 8 oz.)
- 1 Tbsp. extra virgin olive oil
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 1 clove garlic
- 1/4 tsp. dried thyme
- 1/4 tsp. paprika
- 1 tsp. spicy brown mustard (or Dijon mustard)
- 1/3 cup ground flaxseeds (flax meal)
- 3/4 cup shredded mozzarella cheese (finely shredded)
- 1 avocado (large)
- 2 medium tomatoes
- 3 cups microgreens

Directions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- Roughly chop the onion and put it in a high-powered blender. Add the mushrooms and pulse the mixture 3-5 times, until vegetables are finely chopped into pieces larger than rice but smaller than peas. Transfer to a large mixing bowl.

It was easy to make. No trouble staying together but the flaxseed was so overwhelming....did not like the taste.
Any advice on su substitution for the flaxseed???
Want to try it again.

great taste, the patties had just a little bit of trouble staying together but they kept their shape in the plate, just barely though.

Crumbly on the first attempt but held 'ok'. Ate with nann bread as the bun, it was good and worth trying to improve on a second attempt!

twas nicely simple and easy to prep and make. not the same consistency of a hamburger patty, mind you. but if you don't call it that, it's tasty enough to stand on its own.
