Used flaxseed and water as a substitute as I did not have xanthian gum. A little bit disappointed that these did not turn out a little larger, a bit too small. I really had to use silicone baking paper and roll them out because they broke apart and stuck easily. I'm not sure if I'll do this again but it was interesting tasting.
