- 2 large eggs
- 1/4 cup erythritol (brown sugar, or golden monk fruit)
- 2 tsp. pumpkin pie spice (get the recipe here)
- 2 tsp. pure vanilla extract (I use this brand)

This was delicious! I made it for Thanksgiving. Next time I make it I’m going to add a little more of the brown sugar Swerve to make it a touch sweeter.
