- 3/4 cup coconut oil
- 3/4 cup peanut butter (creamy low carb, or almond butter)
- 1/4 cup cocoa powder
- 1 cup Swerve Sweetener (brown sugar or granular)
- 1 tsp. vanilla extract (optional)
- 1 1/2 cups coconut flakes (UNSWEETENED)
- 2 Tbsp. hemp seeds (hulled, also called hemp hearts, you can use an extra 2 tablespoons of coconut flakes if you don't have this. I like the mixed texture and it adds a bit of fiber)
- sea salt (for topping, optional)

Made these tonight…They are delicious and very easy to do. Loved the idea of adding the hemp hearts. Added a great crunchy texture. I used crunchy peanut butter too. Not a fan of coconut so left it out. Definately need to keep in freezer as they start to melt quickly at room temperature. I great “sweet treat” without the sugar.

I made this last night and it was delicious! Will definitely make again. I used the silicone cupcake liners, popped right out clean. If you don’t have, perhaps wax paper and a cookie sheet and break apart like peanut brittle.

Great! This took me about 15 to make. I used a mini muffin pan I had some extra so I made a bark by just patting down the extra on to a silicone mat.
