This soup is amazing! I make the condensed version because I prefer thicker mushroom soup. I also added a little something extra. I hunt for morel mushrooms each year, and dehydrate a few bags for use throughout the year. I used baby bella mushrooms AND I reconstituted some morels in beef broth and marsala wine and used the leftover liquid as my soup base. It is now my new favorite soup!!

Very flavorful - though will do the condensed version next time - a little too much water.

Fast and easy to make. Good yield for a family of 4. It packs lots of flavour and if you have any leftovers, you'll find its even better the next day. If you like a thicker consistency, scale back the wet ingredients to the "condensed" measures.
