A delicious healthy snack i dont feel guilty about. Also shockingly filling. I doubled the recipe since the basic recipe doesnt yeild much I wanted it to be worth my effort. I swapped out the sugar substitute they suggest and used coconut sugar instead. I expect this made them a bit less sweet but I liked it. I also added 1/2 tsp of vanilla which I think made them more fragrant and yummy.

These are nice I have trouble storing them as they get gummy not sure how to solve that problem

These were pretty good, just didn't have the texture as Macaroons normally do, these are really fluffy and light, but would make again.
