- 1/2 cup onion (finely chopped, 60g)
- 28 oz. fire roasted tomatoes
- 2 Tbsp. olive oil
- 3 cloves garlic (crushed)
- 2 Tbsp. ancho chili powder (regular Chili powder works too)
- 2 Tbsp. cumin
- 2 tsp. oregano
- 1/4 tsp. cayenne pepper (add more for extra heat)

I make double this size recipe, in my low acid & carb Keto version, in my Insta Pot. I substitute Bell & mild variety Poblano peppers, & fire roasted peppers for half of the tomatoes. I doubling the Cumin and reducing the Chili powder. I add shredded red cabbage to add cruciferous vegetable texture. Although I can brown the vegetables & lg texture ground beef in the Insta Pot, I prefer to my skillet, then marry all Ingredients in my Insta Pot on Low for an hour.

This was so easy and great tasting. I added a little Matouks Trinidad Scorpion sauce for a little extra kick.

My husband and I really love this chili. It’s super easy to throw together and while it’s simmering I just clean up my kitchen and get my toppings prepared (shredded cheese, sour cream, etc.). We like it spicy, so I put about 1 tsp or so of cayenne pepper. Nice, simple meal for cold weather days.

Super easy and good...topped it with fresh avocado,cilantro, onion, tomato, and shredded cheese. Will definitely make again.

It turned out great I doubled the recipe for lunch the next day. Loved it just as much the second time.
