Reduce the oven temperature to 250°F. Continue roasting the beef until the meat reaches an internal temperature of 135-140°F for medium doneness, 90-120 minutes.
PRO TIP Roasting at a higher temperature allows for the outside to brown nicely, but leads to more moisture loss. Lowering the temperature midway allows for the rest of the cut of meat to cook through and retain more moisture.
