  • 2 pounds chicken breasts (boneless and skinless, 3 to 4 large breasts)
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 2 tablespoons butter (divided, or oil, for frying)
  • 4.5 ounces orange bell pepper (chopped)
  • 4.5 ounces red bell pepper (chopped)
  • 2.5 ounces red onion (chopped)
  • 2 cups cauliflower rice (frozen or fresh)
  • 8 tablespoons queso (store bought, not melted, I used Gordo's brand)
  • 1 cup shredded Monterey Jack cheese

    Easy and good tasting. I pretty much doubled the spices. Home made salsa, avocado and a little extra cheese, queso or feta are a great add. It is a dish I will definitly make again.

    This came out awesome. I would recommend not using frozen cauliflower because it does come out super watery. I topped mine with salsa and added a few jalapeños and cheddar cheese but I would definitely make this again.

    It turned out well! I used frozen cauliflower and it was a bit runny (as she said it might be) but I drained a bit of liquid off (also as she suggested) and it was fine. I really liked having the cilantro garnish. We did end up adding a touch of salt at the table. Our 3 kids (10, 8, and 4) didn’t love it but they ate their required bites without too much protest so I call that a win. ;)

    It was good, but I definitely recommend sautéing the onions and peppers I did not and thought that it would cook down while in the oven, but it does not. It was filling and flavorful. Great recipe if not for that, hubby said he would like it verity mushrooms and crumbled bacon or sausage. Will try again

    Great dish. I used a whole jar of Jalapeño Queso and didn’t use riced cauliflower. Also could have not used the shredded cheese on top. This dish would also be be good with seafood. In my Favs folder.

    So good! Crossed off all my picky husband's boxes (meat, cheese, all in one bowl) while still being low-carb and cheesy. The directions are straightforward and it's pretty easy to make overall. We'll definitely be making it again, especially when we need a quick dinner when friends come over!

    Look everything else I’ve eaten off of this app has been ehh alright but this dinner made me cry with how amazing it was I didn’t have Monterey Jack cheese so I switched with sharp cheddar/ mozzarella and I only had one kind of bell pepper so that’s what I used but still, somehow it was so amazing. I used regular sausage and med salsa w/queso but it still worked fine. I do like spicy though so if you added spicy sausage it could make it even more amazing if possible. Also I added double the seasons for not salt and pepper to make it spicer but do what you refer

    This was excellent. I used leftover rotisserie chicken; I sauted the spices in with the pepper and onions and mixed all ingredients together. Would definitely make again.

    Super easy in the Instant pot! saute the seasoned chicken till partially cooked. Stir in the cauliflower, peppers and onions. Pressure cook on high for 15 minutes, natural release for 10 minites then quick release. Sprinkle with cheese and let melt and serve.

    Delicious! I can’t wait to eat my leftovers. I’m not a fan of cauliflower but this totally hides the flavor.
