These were amazing!!!! I found the batter too runny so I did add a bit extra coconut flour at a time until it reached the consistency of regular pancake batter. They ended up light and fluffy and delicious! I also folded in a few blueberries after the batter was mixed and ready to go in the pan. Served with butter and sugar free syrup. Best pancake recipe I’ve found yet! The consistency is so close to pancakes made the traditional way you won’t know the difference. Thank you!
