- nonstick cooking spray
- 1/2 yellow onion (large)
- 8 oz. cremini mushrooms
- 2 cloves garlic
- 2 Tbsp. butter
- 4 cups frozen riced cauliflower (thawed and drained)
- 3 cups cooked chicken (diced or shredded)
- 1 cup sour cream
- 1 tsp. dried parsley (optional)
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 cup shredded cheddar cheese (for chicken mixture)
- 1 cup shredded cheddar cheese (for topping)

Directions
- Preheat the oven to 375°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Finely the chop onion. Slice the mushrooms. Mince the garlic.

Fantastic recipe, like mac n' cheese without the carbs. I substituted greek yogurt for the sour cream to lower calories a bit and split into 4 servings rather than 6. Make sure to wring out the cauliflower rice thoroughly so it doesn't become a soup.

Only about 8.4 bites per serving on Weight Watchers, and so filling I didn’t even eat my full portion (served with green beans). I also added par-boiled broccoli in the casserole.

It was a nice fresh and healthy tasting. the cauliflower rice gave it a nice crisp taste. I will add a little cheddar next timevand maybe some celery.

So delicious! I substituted sour cream, for cream cheese, and sauted cilantro with the onions, (sounds gross I know) but it wasn't!! It was amazing!

Super yummy! Next time I will chop the mushrooms finer though, my kids picked them out.
