I used an immersion blender and it got thick. Not sure that was your intention, but it was good.

Soup comes out a bit watery, not as creamy as I would think. I believe it is because you don't cook this long enough. Also I would not dice or chop the broccoli the next time. You can def double everything in the recipe and be OK. Seemed like there was not enough in the soup.

I love this recipe.
I subbed out chick broth for veggie broth and subbed in turkey bacon instead of pork. When I finished the last step I poured it into my Vitamix blender and blended it all including turkey bacon pieces until smooth and creamy.
It was Deeeeelish! 😁

Delicious! I skipped the bacon and put in cooked chicken instead, skipping the onions and carrots. I boiled the broccoli seperately and heated the heavy cream and broth mixture in a pot, then mixed it all together after mashing the broccoli and thouroughly softening it.
