I made some adjustments to the batter. I used 1/2 cup of almond milk because the batter was very thick. I also added 1/2 tsp of cinnamon & a teaspoon of pumpkin pie spice. I used a little stevia instead of swerve because I don't like a lot of sweetness in my baking. Since my waffle iron only uses 1/2 cup at a time, I cooked the waffles for about 3 1/2 minutes. I served them with some of my homemade jam instead of syrup. Fantastic recipe with the modifications I made. I will definitely make these again.

The recipe was awesome! Dont get scared away by the fact that whites and yolks need to be separated. True it takes a bit more time, but where is the love in cooking if you dont put a bit of extra time. Also batter has a foamish aspect but it is perfectly pourable into the waffle machine. I recomend to give it 7 mins of cooking time so waffle turns out to be crunchy. They were spectacular wifey was delighted. Pardón my grammar I am not a native speaker.

These were delicious. I added some Lilly’s chocolate chips... we didn’t even use syrup and my 2 & 4 yr old devoured them.

I had to add more almond milk then about 1/4 cup of water, the batter is pretty thick but they were delish

I have tried several keto waffle/pancake recipes since we started the low carb diet and this is the best one. The consistancy is just like regular waffles. I added 1/4 tsp of xanthan gum and used heavy cream instead of almomd milk and they were great.

I had to modify the recipe in regards to the ingredients with the almond milk and swerve. Despite some substitions the waffles came out great! I look forward to making some batches for the family. Great recipe!
