Since you asked.....I tweaked this recipe...and they turned out beautifully. Since I didn’t have any applesauce I used 1/4 C canola oil. I added 2 Tbsp molasses because we like sweeter muffins, and I used 2 eggs instead of just whites. Also I added a tsp baking powder. They are light, moist and delightful. I baked them on center rack at 400. I will certainly use this recipe...thanks for sharing
