- 1 lb. pork butt (cut into 1/2″ cubes)
- 4 onions (medium, sliced thin)
- 1 1/2 cups red wine
- 2 1/2 cups water (or stock)
- 2 carrots (cut 1/2″ cubes)
- 2 yukon gold potatoes (large, cut into 1/2″ cubes)
- 2 tsp. kosher salt (use less if you use regular salt)
- 1 Tbsp. tonkatsu sauce
- 1 Tbsp. tomato paste
- 1/4 cup apple puree
- 1 cardamom pod (black)
- 1 whole star anise
- 1 tsp. oil (Mayu, black garlic)
- 1/2 cup peas
- 2 oz. bittersweet chocolate (good quality)
- 3 Tbsp. butter
- 1/3 cup flour
- 2 Tbsp. garam masala (or curry powder)
- 2 tsp. ground black pepper (freshly, depending on how spicy you want it)
- 1 veggies (batch of tonkatsu or grilled)
