- 8 oz. button mushrooms (quartered, about 2 cups)

- 1 medium onion (chopped)
- 3 carrots (cut into 1-inch pieces on the bias)
- 2 celery stalks (thinly sliced)
- 1/4 cup sake
- 1/4 cup curry powder (such as S&B)
- 1 Tbsp. Garam Masala
- 1 russet potato (cut into 1-inch pieces on the bias)
- 1 Fuji Apple (peeled, grated on the large holes of a box grater)
- 1 Tbsp. dark brown sugar
- 1 Tbsp. rice wine vinegar (unseasoned)
- 16 oz. boneless center cut pork chops (excess fat trimmed)
- 1 cup all purpose flour
- 3 large eggs (room temperature, beaten to blend)
- 3 cups panko (Japanese breadcrumbs)
