- 200 grams white chocolate (good quality, chopped)
- 200 grams dark brown sugar (1 cup, firmly packed)
- 250 mL hot water
- 2 Tbsp. golden syrup
- 2 tsp. vanilla bean paste
- 2 eggs (at room temperature)
- 150 grams self raising flour
- 2 tsp. canela
- 1 tsp. ground ginger
- 1 tsp. ground cardamom
- 225 grams almond meal
- 375 mL dry red wine
- 60 grams caster sugar
- 1 whole star anise
- 1 cinnamon stick (x 7cm)
- 1 vanilla bean (split, or 1 tsp vanilla bean paste)
- 3 pears (just-ripe, medium-sized Packham's triumph, peeled)
- 500 grams cream cheese (softened)
- 250 grams mascarpone (softened)
- 100 grams butter (softened)
- 250 grams icing sugar (sifted)
- 1 tsp. rosewater
- 4 drops food coloring (natural pink extract, I use Queen brand)
- 250 mL cream (thickened, whipped)
- 1 cup crushed pistachios
- rose petals (Food-grade dried, these can be found in most specialty food and tea stores – I used Pariya brand)
- 3 poached pears (spiced, sliced, or you could leave them whole, if you prefer)
