- 700 grams meat (ground kangaroo, mince, or other meat of choice such as beef or lamb)
- 1 brown onion (large, grated)
- 1 large egg (beaten)
- 1/2 cup panko (breadcrumbs)
- 3 garlic cloves (minced)
- 1 Tbsp. Dijon mustard
- 50 grams grated Parmesan (/ other strong flavoured cheese, optional but highly recommended)
- 1/2 Tbsp. dried mixed herbs
- 1 tsp. ground cumin
- 1/2 tsp. ground black pepper
- 1 pinch salt
- 300 grams beetroot (fresh, finely diced, see note 1)
- 2 Tbsp. olive oil
- 1 brown onion (small, finely diced)
- 2 Tbsp. tarragon leaves (finely chopped)
- 1 Orange (Zest and juice of, large)
- 1/2 cup red wine vinegar
- 1/4 cup red wine (I used a shiraz – see note 2)
- 50 grams muscovado sugar (see note 3)
- 1 tsp. ground black pepper
- 1 pinch salt

I thought i took too much when i made this but i loved how it turned out!! I used pre cooked beets for my relish, but do recommend fresh beets. Kangaroo is so good!
