- 5 oz. baby spinach (package fresh)
- 1 cup red onion (pickled)
- 1 cup raisins
- 1 cup peanuts (roasted and salted)
- 2 Tbsp. butter
- 2 Tbsp. spelt flour (see notes)
- 5 1/2 cups chicken broth
- 1 cup coconut milk (canned)
- 5 1/2 tsp. curry powder (Indian, or to taste)
